The shop list...
750g of mince
3 onions
2 green chillis or 4 if you like it Very Hot
Garlic fresh
2 tins of good quality tomatoes
1 tin kidney beans
Oxo cube
Sugar
Salt n pepper
Veg oil

I was getting so fed up with packer sauce mixes, there a no go.
If you love chilli then you will love mine.

To cook this I use a good quality wok,
Heat some oil, small slice your onions and cook till soft, chop your chilli's "be warned wash your hands after cutting chilli's do not touch any part of your body blink.gif it's recommended that you wear gloves".
I cut just the tops off, then slice all the rest in small slices, and use the seeds as well.
Put all the chilli into the wok with the onions.
Now chop up 2 cloves of garlic, fine chop and add to mix.
Season with fresh ground black pepper, and rock salt.
Add 1 oxo cube crumbled in the mix.
Give it a good stir, and remember not to have the heat too high.
Open the tin's tomatoes, I poor the tin in my hands over the wok, then gently squeeze the juice out, when all the juice is out put them on the chopping board, cut the tops of the tomatoes off were the stork was and discard.
Finely chop the tomatoes almost to a pulp.
Then add to the mix in the wok.
Give a good stir then add the kidney beans.

Now cook the mince in a separate pan, well cook it, and then strain oil off if any, then add mince to the mix in the wok.
Now add 1 good teaspoon of sugar to the mix.

Well the way I do it, is cook it, then I leave it for an hour off heat,
Go and enjoy yourself, have a beer or two and a chat on the Sheringham surf forums laugha.gif
Then reheat to it bubbles slowly stirring.
Serve up with French bread,
You will love it, it's got taste, and it?s not over hot.

It's a simple recipe, but it took so long to get it to right.
I've let my secret chilli recipe out laugha.gif laugha.gif

Next week, learn the secrets of buffalo's spag sauce ohmy.gif

we are big eaters so it's for two people,
But you can easy dish that up for 4, no prob.
but my advice is to cut down on the chillis, only use two, thats hot.
then build up to the heat you like,
if you dont like hot food then no way use 4 chillis, it's a ring burner blink.gif laugha.gif

Well your right it was bloody tasty!!! I used 600g of quorn mince (cos we had veggies round) and served with rice and pittas, it served 3 adults and 3 kids, though kids found it a bit hot - I used 3 green chillies.

It was absolutely georgous Baz, if you have any more keep em coming biggrin.gif

Great recipe, made it on Monday and it's still going strong. Got the wrong chillis (why don't they put MILD where you notice it instead of blending it into the background) so I had to use all five in the pack, and a little chilli powder too. Better get a new jar. wink.gif

Wasn't sure how much garlic to put in, think I overdid it. ohmy.gif But an extra three days cooking has calmed it down a lot.

Rather than using sugar, I added some frozen peas which tend to be rather sweet, and sweetcorn which added a little crunchiness.

All in all, far better than the packet stuff I've used in the past.

Must admit I changed the recipe too, I dont like kidney beans, so on warm up I sliced a good couple of handlfulls of chestnut mushrooms in (Sorry Baz sad.gif ) and if you got crunchy frozen peas maybe put them in earlier laugha.gif .......joke wink.gif

I Made It...... biggrin.gif bouncy1.gif

I added all of the ingredient Baz said..all by the sugar. I used 2 green chilli's, one can of Kidney Beans and one can of tomatoe's..but even that made loads ohmy.gif So I've taken Plugs advice and put some by to chill for another day wink.gif

It was really lovely and it wasn't as hot as I thought with the Chilli's in it, but it did give that added kick and the taste was lovely Baz...well done you on a good recipe..I shall use that from now on :thm:
